This mix veg uthappam is a good alternative to our roadside dosas. It contains the same goodness as dosas but in a healthier fashion. Incorporating various vegetables increases its fiber content, antioxidant content, and overall nutritional density. Peanuts are a good source of essential fatty acids which also help in better absorption of fat-soluble vitamins. Make this simple recipe as it's not just a good alternative, it's a Healthy alternative. 

INGREDIENTS:
  • Dosa batter [ready ragi multigrain] - 1 cup 
  • Grated mixed vegetables [carrots, cabbage, cauliflower, onions] - 1 cup
  • Roasted peanuts powder - 1 tsp
  • Coriander [chopped] - 2 tbsp
  • Sugar - ½ tsp
  • Chili powder - as per taste 
  • salt - as per taste
  • Sesame seeds - 1 tsp
  • Oil - minimal 
DIRECTIONS:
Step 1 Combine together the dosa batter, vegetables, peanuts, coriander, sugar, chili powder, salt, and 2 tbsp water in a bowl and mix well. Keep aside. Step 2 Heat a non-stick pan and grease it lightly with oil. Step 3 Sprinkle ½ tsp of sesame seeds on it. Step 4 When they crackle, pour a ladleful of the batter and spread it evenly to make a circle of 75 mm (3") diameter. Step 5 Cook using ½ tsp of oil, till both sides are gulden brown in culor. Step 6 Repeat with the remaining batter to make 7 more turnovers. Step 7 Serve hot with hummus or Greek yogurt.
