INGREDIENTS:
  • For the salad 
  • Cucumber - 1/4th cup 
  • Roasted peanuts - 1 tsp 
  • Freshly grated coconut - 1/2 tsp 
  • Green chilli, finely chopped - 1/2 
  • Chopped coriander leaves - 2 tsp
  • Curd - 2tbsp
  • Salt as required 
DIRECTIONS:
Step 1 Rinse 8 peel the cucumbers. chop them finely. Keep aside for 15-20 minutes.  Step 2 Now squeeze water from them and put them all in a bowl.  Step 3 In a mortar and pestle, coarsely crush the roasted peanuts.  Step 4 Mix the peanuts, coconut, coriander leaves with the cucumber.  Step 5 Add curd and salt  Step 6 Mix well and serve khamang kakdi.
