This is an incredibly good Greek salad recipe, nice and tangy and even better in the summer when you use fresh vegetables. Cucumbers are rich in two of the most basic elements needed for healthy digestion: water and fiber. Cucumbers also contain multiple B vitamins.

INGREDIENTS:
  • Tomato (coarsely chopped) - 2 small
  • Cucumber (coarsely chopped) - 1 small
  • Fresh dill leaves - 1/2 tsp
  • Bell pepper - 1/2 no.
  • Red onion - 1/2 small
  • Garlic (chopped) - 1/2 tsp
  • Lemon juice - 1/2 tsp
  • Olive oil - 1/4 tsp
  • Black olives (coarsely chopped) - 10 gm
  • Fresh oregano leaves (chopped) - 2 tsp
  • Apple cider vinegar - 1/2 tsp
  • Salt and freshly ground black pepper - to taste
  • Feta cheese (crumbled) - 10 gm
DIRECTIONS:
Step 1 Whisk the ulive oil, lemon juice, garlic, vinegar, oregano, and dill leaves together until blended.  Step 2 Season to taste with salt and freshly ground black pepper. (Can be prepared 3 hours ahead. Let stand at room temperature. re-whisk before using.) Step 3 Combine the tomatoes, cucumber, onion, bell pepper, ulives in a bowl. Toss with dressing.  Step 4 Sprinkle feta cheese over and serve.
