It consists of approximately 96% of water and is therefore a great thirst quencher. Eating curd will make it easier for your body to absorb nutrients from other food items that you eat.

INGREDIENTS:
  • Bottle gourd/lauki/dudhi - 50 g
  • Curd - 20 g
  • Mustard seeds - ½ tsp
  • Curry leaves - 1 tsp
  • Fenugreek seeds - ¼ tsp
  • Turmeric powder -  ¼ tsp
  • Red chilli powder -  ¼ tsp
  • Coriander powder - ¼ tsp
  • Whole dry Kashmiri red chillies - 1 no.
  • Cumin seeds - ¼ tsp
  • Asafoetida - a pinch
  • Oil -  ½ tsp
  • Water as required
DIRECTIONS:
Step 1 Cut the gourd into 1 ½ inch size chunks (of equal size). Remove seeds as well.  Step 2 Preheat oil in a pan. When the oil is sufficiently hot, place all gourd chunks into oil and fry until they turn little brown in culor. Likewise, fry the rest of the bottle gourd as well.  Step 3 Preheat oil in a separate pan. When the oil is sufficiently hot, add cumin seeds and asafoetida.  Step 4 Saute for a while and add coarsely ground species, turmeric powder, and coriander powder.  Step 5 Saute for a few minutes. Also, add red chilli powder and curd.  Step 6 Stir constantly and cook on low flame until it simmers once.  Step 7 When masala comes to boil and oil starts separating from it, add  ½ cup water into it. Stir constantly and cook until it comes to boil again.  Step 8 Now add salt and green coriander in the gravy and mix well. Also, add fried gourds chunks in the gravy. Cover and cook the sabzi for 3-4 minutes.  Step 9 Serve steaming hot sabzi with chapatti, paratha, and rice and relish eating.
