Chicken is high in protein, low in sodium, and is a good source of blood-building vitamin B6, bone-strengthening phosphorus, and cell-protecting selenium. Spinach is an amazing source of potassium. INGREDIENTS:
  • Chicken - 50g
  • Brown rice [raw] - 30g 
  • Black pepper [grounded] - as per taste 
  • Garlic [crushed] - 2 cloves 
  • Onion [chopped] - 1 tbsp
  • Paprika - 1 tsp 
  • Tomatoes [chopped] - 1 tbsp
  • Green Peas - 1 tbsp  
  • Spinach [chopped] - 25gms
  • Chicken broth - 1 cup 
  • Olives -  2-3 nos 
  • Oil - ½ tsp 
  • Salt - as per to taste
DIRECTIONS:
Step 1 Preheat the oven to 350 degrees F. Heat oil in a cooking pan.  Step 2 Spread chicken all over the pan and add salt and black pepper to it and cook, until lightly browned on both sides. Cover chicken with foil and bake chicken for 25 to 30 minutes.  Step 3 Meanwhile, cook green peas, spinach, garlic, and onion for about 10 minutes or until vegetables are tender, stirring occasionally. Stir in paprika and cook for 30 seconds.  Step 4 Add tomatoes with their juice, broth, and brown rice; cover and simmer for 10 minutes. Spoon the rice mixture into the baking dish. Step 5 Garnish with ulives and serve.
