INGREDIENTS:
  • Zucchini [roughly chopped] - 1 [big]
  • Onions [chopped] - 1 [small]
  • Cumin seeds - ½ tsp
  • Green chillies - 1
  • Ginger [chopped] - 1 tsp
  • Turmeric powder - ¼ tsp.
  • Red chilli powder - ½ tsp.
  • Coriander powder - ½ tsp.
  • Garam masala powder - ½ tsp
  • Salt - to taste
  • Red/green capsicum curls  [for garnish]
  • Oil - ½ tsp
DIRECTIONS:
Step 1 Saute chillies and ginger for a minute. Add chopped zucchinis and saute further for a minute. Add turmeric powder, red chilli powder, coriander powder and garam masala powder and mix well. Step 2 Cook till the zucchinis are done. Transfer this into a bowl, coul and add salt and onion and mix well. Mash it lightly  Step 3 Heat a non-stick tawa, drizzle oil. Step 4 Divide the mixture into portions, shape them into balls and flatten to make a kebab. Step 5 Place the kebabs on a hot tawa, shallow-fry, till they are brown and crisp on both the sides.  Step 6 Place kebabs in the centre of the plate, garnish with red and green capsicum curls and serve immediately.
