Veg chickpeas hotpot is a very good meal if had with toast. Chickpeas are a good source of protein, soluble & insoluble fiber which helps to prevent constipation, they are an excellent source of the trace mineral manganese, which is an essential cofactor in a number of enzymes important in energy production and antioxidant fiber. It also helps in reducing cholesterol, lower LDL, it also helps to stabilize blood sugar because of its low glycemic index & soluble fiber.  Adding other colourful vegetables which are low in calories and rich in fiber, antioxidants will boost up your immunity.

INGREDIENTS:

  • Carrots, finely chopped - 2 tbsp.
  • Red capsicum, ½ inch pieces - 2 tbsp.
  • Spring onions, halved - 3
  • Garlic - 2 cloves
  • Salt - as per taste
  • Onion ,finely chopped - 2 tbsp.
  • Chickpeas (kabuli chana),boiled - 30 gm
  • Water - 200 ml
  • Spring onion greens (chopped) - 2 stalks
  • Black peppercorns, crushed - 3-5
  • Fresh parsley - 1 tsp.
  • Green chillies finely chopped - 2
  • Oil - ½ tsp.

DIRECTIONS:
Step 1 Soak chickpeas in water 5-6 hours. Drain and boil it and keep it aside Step 2 Take saucepan heat oil and add garlic, spring onion, onions, and mix till onion turns transparent. Add green chilies to it and saute. Step 3 Add boiled chickpeas and mix. Add half spring onion green, red capsicum, crushed peppercorn and mix it. Step 4 Sprinkle parsley and remaining spring onion greens.  Add 200 ml of water, Cover with lid and keep it on low flame for 2-3 mins. Step 5 Serve hot.
