Ridge gourd is a very healthy veggie with very few calories. It contains insulin-like peptides that lower and balance blood sugar levels and these powerful peptides lower the amounts of sugar excreted in through the urine. Ridge gourd is very important for those who are suffering from diabetes and hypoglycemia. It is also a good anti-inflammatory the agent thus helps in dealing with cardiovascular diseases, strokes, and cancer. Also, ridge gourd is also a good detoxing agent for the liver, blood, and other tissues of the body.
Ridge Gourd also contains Vitamin C for keeping away colds, B Vitamins for good mood and vitality, zinc for strengthening our immune system, iron for anemia, manganese and magnesium for enzyme production and immunity, plus calcium and phosphorus for strong bones.

INGREDIENTS:
  • Ridge gourd [chopped] - 100 g 
  • Split Bengal Gram [raw] - 1 tbsp 
  • Split skinless green gram - 1tbsp
  • Onion [chopped] - 1 tbsp 
  • Ginger [chopped] - 1 tsp 
  • Green chilli [chopped] - 1 no.
  • Cumin seeds - ¼ tsp
  • Mustard seeds -  ¼ tsp
  • Turmeric Powder - ¼ tsp
  • Curry leaves [whole] - 4 to 5 nos.
  • Oil - 1 tsp
  • Salt - as per taste
DIRECTIONS:
Step 1 Heat a deep non-stick pan, add split Bengal gram, split skinless green gram, salt, turmeric powder, and 1 cup water and mix well. Cover and cook for 15-20 minutes or till both the grams are almost done. Step 2 Peel ridge gourds and cut them into big cubes. Step 3 Put ginger and green chilli in a mixer jar and grind to a coarse paste with a little water. Step 4 Add the ridge gourd to the grams, mix, cover and continue to cook. Step 5 Add the ginger-green chilli mixture and mix well. Cover and continue to cook. Step 6 Heat oil in another non-stick pan. Slice the onions. Step 7 Add cumin seeds and mustard seeds to the hot oil and let them splutter. Add curry leaves and onion and sauté till the onion soften. Add this tempering to the gram mixture and mix well. Cover and cook on low heat for 1-2 minutes. Let it stand for a few minutes. Step 8 Transfer into a serving bowl and serve hot garnished with green chilli.
