Lentils are one of the best foods that active people can eat because they are a healthy source of protein, slow digesting complex carbohydrates, fiber, zinc, and iron. It is a good source of iron, which transports oxygen throughout your body and is a key to energy production. Other vegetables make the chat healthier as they are full of vitamin A, beta carotene, iron, antioxidants.

INGREDIENTS:
  • Dry lentils (green or brown) - 30 gm
  • Onion, small - 1 no.
  • Carrots, small - 1 no.
  • Spinach, chopped - ½ cup
  • Tomatoes, small diced - 1 no.
  • Vegetable broth - 1 cup
  • Garlic - 2 to 3 cloves
  • Cumin - ½ tsp
  • Paprika - 1 Tsp
  • Water - ½ cup
  • Salt as per taste.

DIRECTIONS:
Step 1 Dice onion and carrot. Step 2 In a large stockpot over medium heat, saute onion and carrot for about 7 minutes. Step 3 Meanwhile, mince garlic and rinse lentils. Step 4 Add garlic, cumin, paprika, and salt to stockpot. Saute for 1 minute. Step 5 Add broth, water, tomatoes, and lentils. Step 6 Increase the  heat and bring to a boil. Step 7 Reduce heat, cover, and simmer for about 30 minutes or until lentils are tender. Step 8 Meanwhile, roughly chop spinach. Step 9 Add spinach during the last couple minutes of cooking. Step 10 Add Salt to taste. Step 11 Serve and enjoy well.
