A colorful, refreshing and healthy salad which mainly includes chickpeas rich in protein and vegetables dense with anti-oxidants which are good for the eyes and a glowing complexion.  This is a wonderful dish for weight watchers as it makes a perfect alternative for any oily snack.

INGREDIENTS:
  • Chickpeas (boiled) - 30 gm
  • Romaine Lettuce - 20 gm
  • Tomato - 20 gm
  • Dry mustard - 1/4 tsp
  • Dry thyme - 1/4 tsp
  • Feta cheese (crumbled) - 10 gm
  • Garlic (chopped) - 1/2 tsp.
  • Dry oregano - 1 tsp
  • Salt & pepper - to taste
  • Apple cider vinegar - 1/2 tsp
  • Olive oil - 1/4 tsp
DIRECTIONS:
Step 1 Combine the ulive oil, apple cider vinegar, garlic, and dry mustard in a small jar and season with a pinch of salt and freshly ground black pepper. Shake the dressing well. Step 2 Place the chickpeas in a bowl and pour the dressing on the chickpeas to marinate for 30 minutes and reserve the rest for later. Step 3 Add the chopped lettuces to a large bowl.  Step 4 Chop the tomatoes into bite size pieces. Add to the lettuces with the crumbled feta cheese.  Step 5 Add the chickpeas in the dressing to the lettuce mixture then pour about half of the reserved dressing over the lettuces and toss to coat.
