This recipe is a perfect blend of macronutrients and micronutrients to start the day with. The egg is an excellent source of high-quality protein. Carrots and capsicum are rich in vitamin A, and B-Complex vitamins and minerals respectively.

INGREDIENTS:
  • Mini idlis - 4 nos. (diced)
  • Onions - 1 tbsp (chopped)
  • Cumin seeds - ¼ tsp
  • Carrots - 1 tbsp (chopped)
  • Capsicum - 1 tbsp (chopped)
  • Salt - as per taste
  • Black pepper powder - a pinch
  • Turmeric powder - ¼ tsp
  • Egg - 1 small
  • Low-fat unsalted butter - 1 tsp
  • Coriander leaves - a sprig (chopped)
DIRECTIONS:
Step 1 In a bowl, mix egg with salt and pepper powder. Step 2 Heat ½ tsp butter in a non-stick pan and scramble eggs. Keep it aside Step 3 In another pan, heat the remaining butter and add the cumin seeds and sauté onions, carrots, and capsicum. Step 4 Now, add turmeric powder to it and add diced idlis to it. Step 5 Stir-fry for a few minutes and add scrambled eggs to it. Step 6 Stir well and serve hot garnished with coriander.
