The fiber-related components in broccoli do a better job of binding together with bile acids in your digestive tract when they've been steamed. Eating foods with a natural fiber like broccoli can prevent constipation, maintain a healthy digestive tract and lower the risk of colon cancer. Cauliflower, one of the several cruciferous vegetables, is an ideal weight-loss companion for meatless meals.

INGREDIENTS:
  • Broccoli -  25g
  • Cauliflower -  25g
  • Spring onion -  10g
  • Carrot -  15g
  • Asparagus -  10g
  • Snow peas -  15g
  • Oil -  ½ tsp
  • Salt & pepper to taste
  • Bread -  1 slice
Topping:
  • Lemon rind (grated) -  ½ tsp
  • Parsely (chopped) -  1 tbsp
  • Water as required
DIRECTIONS:
Step 1 Remove crusts from bread and slice into strips. Bake at 160 degrees C till crisp.  Step 2 Top and tail snow peas, pare and slice asparagus stems. Pare carrots into thin ribbons.  Step 3 Combine all the vegetables. Mix topping ingredients in a small bowl. Set aside.  Step 4 Stir-fry spring onions, brocculi, and cauliflower for 1 minute. Add carrots.  Step 5 Add 2 Tbsp. water and stir till vegetables are tender. Stir in snow peas and seasoning.  Step 6 Turn into a serving dish, stir in bread strips and parsley topping. Serve immediately.
