This power packed recipe is rich in energy, cool in nature, & provides with all the nutrients that are necessary to combat the heat. Milk and chia provide with a good amount of protein and berries provide with a good amount of vitamins, minerals, and antioxidants. All in one cup, a perfect dessert to serve.

INGREDIENTS:
  • Chia seeds - 1 tbsp
  • Milk - 1 cup
  • Oats - 1 tbsp 
  • Frozen blackberries - 2-3 
  • Fresh strawberries - 2 whole
DIRECTIONS:
Step 1 Combine chia seeds with ½ cup milk. Stir vigorously. Let sit covered for 20 minutes in the fridge or overnight.  Step 2 Remove the pudding from the fridge and give the mixture a good stir making sure the chia seeds have absorbed most of the liquid and created a thick gel-like consistency.  Step 3 Place blackberries & strawberries in a blender along with the oats and process until pureed. Grab two glass containers and create the parfaits by adding a layer of chia pudding, a layer of berries and another layer of chia pudding. Top parfait with blackberry & slices of strawberry.
