This is a traditional Maharashtrian recipe made of gram flour and spices for quality taste as well as good health. Gram flour or besan is high in protein and vitamins like vitamin B1 and B2 that help boost energy metabolism. Being low in glycemic index and rich in fiber, it is diabetic friendly and also helps relieve constipation. It contains phosphorus and magnesium which prove to be essential for healthy bones.

INGREDIENTS:
  • Gram flour - 2 tbsp 
  • Onion [chopped] - 1 tbsp 
  • Capsicum [chopped] - 1 tbsp
  • Ginger [minced] - ½ tsp
  • Green chili [minced] - ½ tsp
  • Garlic [minced] - 2 cloves
  • Salt - as per taste
  • Turmeric powder - 1 tsp
  • Coriander powder - 1 tsp
  • Oil - 1 tsp
  • Coriander leaves [chopped] - 1 tsp
  • Water - 4 cups [400 ml]
DIRECTIONS:
Step 1 Grind ginger, garlic, and green chilli together to a paste. Heat oil in a pot on medium heat. Add cumin seeds and ginger-garlic-chilli paste. Sauté for a minute. Step 2 Add onions, capsicum, and all the ground spices. Mix well and cook for about 2 minutes till the onions start to soften. Step 3 Add  1 cup of gram flour and mix well. Cook with continuous stirring for about 2-3 minutes till the gram flour and the onion and spice base are mixed properly. Step 4 Add 2 cups of water and continuously mix till there are no lumps. Cook for 5 minutes till the gram flour curry thickens. Then, add the remaining 2 cups of water, mix well until smooth, and cook covered for another 10 minutes on low heat or until the desired consistency is reached. Step 5 Garnish with fresh coriander and serve hot.
