All of the vegetables and herbs used in this salad have their unique benefits and contain a variety of antioxidants and since they are prepared fresh and uncooked, the nutritional values are most effective. This salad is a big plate of vitamin A, vitamin C, and essential minerals and is very low in cholesterol.


INGREDIENTS:

Dressing:

  • Olive oil - 1 tsp
  • Cider vinegar - 1 tsp
  • Lemon juice - 1 tsp 
  • Salt - to taste
  • Ground mustard - 1/4 tsp
  • Paprika - 1/4 tsp 


Salad:

  • Lettuce, torn into pieces - 1 small head
  • Avocado, diced (Optional) - 1/2
  • Spring onions with tops, sliced - 2
  • Cucumber (Chopped) - 1 small
  • Cherry tomatoes/tomato (Chopped) - 1 cup
  • Crumbled blue cheese - 2 tsp


DIRECTIONS:
Step 1 Whisk dressing ingredients, cover and refrigerate.  Step 2 Just before serving, toss together lettuce, avocado, onions, cucumber, tomato and blue cheese in a large salad bowl. Step 3 Sprinkle with seasoned salt. Whisk the dressing and pour over the salad, toss to coat. Serve immediately.
