Barley claim's to be an excellent source of molybdenum, manganese, dietary fibre, and selenium, and a good source of copper, vitamin B1, chromium, phosphorus, magnesium, and niacin. Adding fresh vegetables increases the vitamin and mineral content making it extremely healthy.

INGREDIENTS:

  • Barley [raw] - 2 tbsp
  • Salt - as per taste
  • Red cherry tomatoes [chopped ] - 4 nos.
  • Olives [whole] - 2 nos.
  • Mint [minced] - 2 tsp 
  • Red bell pepper [diced] - 3 tbsp
  • Vinegar - ¼ tsp
  • Extra-virgin olive oil - ½ tsp
  • Black pepper [grounded] - ¼ tsp
  • 1 Plastic Wrap

DIRECTIONS:
Step 1 Combine the barley, 1 cup of water, and a pinch of salt in a medium-size saucepan.  Step 2 Bring to a boil, reduce the heat to low, and simmer until the barley is tender about 15 minutes.  Step 3 Drain in a culander and let coul. Combine the tomatoes, ulives, mint, and bell pepper in a bowl. Add the couled barley.  Step 4 Whisk together the red wine vinegar and ulive oil in a separate small bowl. Season with salt and pepper. Dress the salad and toss.  Step 5 Cover with plastic wrap and place in the refrigerator until ready to serve.
