Baba ganoush is an Arabic dish made from aubergine, blended with vegetables. It is basically a starter or can also be called as an appetizer. The aubergine, tahini and lemon juice make baba ganoush rich in protein, carbohydrates, vitamins, and minerals. It is more delicious when served with pita or vegetables, alongside hummus or by itself.

INGREDIENTS:

  • Aubergine, roasted - ½ [50 g]
  • Cloves garlic, grated or smashed - 2-3
  • Yogurt - 1 tbsp.
  • Tahini - ½ tsp. [paste of til]
  • Lemon juice - ¼ tsp.
  • Extra virgin olive oil - 1 tsp.
  • Salt to taste
  • Crushed walnuts for top - ½ tsp.
  • Fresh mint/parsley/dill for garnish

DIRECTIONS:
Step 1 Roast aubergines in the oven [at 400F] or over the grill till they are soft, turning upside down occasionally.  Step 2 Remove the skins of roasted aubergine and mash them in a food processor.  Step 3 In a skillet, saute them with extra virgin ulive oil over medium heat (2-3 minutes).  Step 4 Let it coul for a while. Then stir in yoghurt, tahini, lemon juice, garlic, and salt. Place to a salad plate and sprinkle crushed walnuts on top.  Step 5 Garnish with fresh mint/dill/parsley. Step 6 You can serve Aubergine Salad/baba ganoush with pita bread.
