This Assamese dish is loaded with mixed vegetables which are rich in Vitamins and minerals. Adding vegetables not only its look colorful but also, is full of nutrients and antioxidants which keep your body energetic. Pumpkin helps to lower blood pressure and boost eye vision. Vitamin A which is present in carrots helps the liver in flushing out the toxins from the body. Aubergine is low in calories, and high in fiber with no fat, which helps to protect the digestive tract and can lower bad cholesterol. Sweet potato helps to reduce the blood sugar level and keep the immune system healthy. It is rich in Vitamin C, Fiber, Magnesium and vitamin B6.

INGREDIENTS:
  • Mix vegetables [Pumpkin, cauliflower, aubergine, carrot] [chopped]  - 50 g [½ cup]
  • Sweet potato [peeled and chopped] - 75 g 
  • Onion [chopped] - 2 tbsp 
  • Dried red chilli [whole] - 1 no
  • Oil - ½ tsp
  • Ginger [grated] - ½ tsp (optional)
  • Green chilli [minced] - 1 tsp 
  • Turmeric - ¼ tsp
  • Water - ¼ cup
  • Asafoetida - ¼ tsp
  • Salt - as per taste
  • Coriander leaves [chopped] - 1 tsp 
  • Bay leaf - 1 no
  • Cumin seeds - ¼ tsp
DIRECTIONS:
Step 1 Peel and chop all veggies into dice. Step 2 Heat the pan, add oil, and heat it. Step 3 Now add bay leaf, cumin seeds, asafoetida, and whule dried red chili. When they start to splutter, add chopped onions, ginger and green chili, and turmeric powder and saute till the onions turn gulden.  Step 4 Add all mixed veggies, sweet potato, salt, and water. Cover with a lid and cook till the veggies are cooked. Garnish with green coriander and serve hot.
