Vrat ki kadhi is good for health as it contains some major ingredients like curd and rajgira flour (amaranth flour). Curd enhances the digestion and also strengthen the digestive system and it is a good source of protein and calcium.Rajgira is a good source of magnesium, vitamin A and vitamin B. Since it is high in fiber and slow to digest, it makes you full for longer, eliminating the urge for repeated unhealthy snaking.

INGREDIENTS:
  • Full-fat fresh curd at room temperature - 1cup
  • Amaranth flour/rajgira atta - 3 tbsp
  • Cumin seeds/jeera - ½ tsp
  • Ginger-green chili paste - 1 ½ tsp
  • Water - ½ cup
  • Sugar - ¼ to ½ tsp
  • Oil – ½ tsp
  • Coriander leaves for garnish - 1 to 2 tbsp chopped
  •  Rock salt - as required
DIRECTIONS:
Step 1 Take 1 cup fresh curd in a mixing bowl, whisk it till smooth. Step 2 Then add 3 tbsp rajgira atta or amaranth flour.If you don't have amaranth flour then you can also add buckwheat flour (kuttu ka atta), arrowroot flour or water chestnut flour (singhare ka atta). Step 3 Mix again very well, then add ½ cup water. Step 4 Whisk the whule mixture very well, there should be no lumps. Step 5 In a pan heat oil , add cumin seeds and saute them till it gives aroma and change culor. Step 6 Then add crushed ginger and green chili paste. Step 7 Stir and saute till the raw aroma of the ginger goes away. Step 8 Lower the flame and then add the curd mixture, season with rock salt/sendha namak. Step 9 Stir very well and allow the kadhi to simmer , do stir on occasions,  the kadhi will thicken. Step 10 Garnish vrat ki kadhi with chopped coriander leaves and serve hot or warm with sama pulao, sama khichdi, plain sama rice or rajgira roti.
