One of the most popular dish veg korma is a mixture of various vegetables which cooked in a healthy way will provide our body with the essential vitamins and minerals present in these vegetables. Also adding the Spice adds phytonutrients in the food.

INGREDIENTS:
  • Mix vegetables [Carrot, French beans, Cauliflower florets, capsicum, Green peas] [chopped] - 2 cup 
  • Oil - ½ tsp
  • Star anise - 1 piece
  • Curry leaves [crushed] - 5 no.
  • Onions [chopped] - 2 tbsp
  • Tomato puree - ½ cup
  • Salt - as per taste
  • Cumin seeds - ½ tsp
  • Coriander seeds - ½ tsp
  • Fennel seeds - ½ tsp
  • Garlic clove  [minced] - 1 no.
  • Ginger [chopped] - ½ tsp
  • Dried red chilli [whole] - 1 no.
  • Green chilli [chopped] - 1 no.
DIRECTIONS:
Step 1 For the masala paste, heat oil in a non-stick pan.  Step 2 Add cumin seeds. coriander seeds, fennel seeds and saute. Crush the garlic cloves lightly and add and saute. Chop ginger and add and mix. Step 3 Add red chillies, green chillies, curry leaves, star anise and saute. Place a basket in a bowl.  Step 4 Add carrot cubes, French beans, and cauliflower florets. Add some water and cook in the microwave for 3-4 minutes. Step 5 Heat oil in a non-stick pan. Add onions and saute till the onions are light brown. Add the ground masala and mix. Remove vegetables from the microwave. Step 6 Add tomato puree to the pan. Add all the vegetables, capsicum, and green peas and mix.  Step 7 Add a ½ cup of water, and salt, and mix well. Cover and cook for 2-3 minutes or until the vegetables are cooked. Step 8 Serve hot.
