Vaghareli roti is an authentic Gujarati recipe made with roti and curd and some seasonings. It is known for its tangy taste and the satiety that it gives after having it. As rotis give us satiety because of its fiber content and yoghurt is known for its probiotic factor.

INGREDIENTS:
  • Leftover Rotli / Rotis / Chapatis - 1.5 
  • Yogurt / Curd  - ½ cup
  • Green Chilli [roughly chopped] - 1 
  • Oil - 1 tsp
  • Mustard Seeds - ¼ tsp
  • Cumin Seeds - ¼ tsp
  • Hing / Asafoetida - a pinch
  • Turmeric Powder - ¼  tsp
  • Red Chilli Powder - ¼ tsp
  • Curry Leaves - 3-4
  • Coriander Leaves [chopped] - 1 tbsp
  • Salts as needed
  • Water as needed
DIRECTIONS:
Step 1 Whisk the yogurt in a bowl, add a ½ cup of water and make a smooth batter and keep aside. Step 2 Cut the leftover rotis into small-small pieces like nacho’s or potato chip’s size and keep aside Step 3 Heat the oil in a deep pan. Add mustard seeds, cumin seeds and a pinch of Hing. Step 4 Now add chopped green chillies, curry leaves and saute it for few seconds. Step 5 Add the chopped rotis pieces in it and saute it for 2-3 minutes on medium flame. Step 6 Add the whisked yoghurt into the roti mixture. Add salt, turmeric, red chilli powder and mix it well and stir it continuously for 2-3 minutes till the mixture becomes a little bit thick and start boiling. Now switch off the flame. Step 7 Vaghareli Roti is ready, garnish it with chopped coriander leaves, sprinkle a pinch of red chilli powder as per your taste.
