This is an amazing combination of ingredients. Both tofu and sprouts add to the health quotient. Tofu cubes add body and volume to the dish, the bean sprouts add lightness and sweetness and make the whole recipe refreshing. Bean sprouts being dense in fiber and antioxidants when combined with tofu which is rich in soy proteins, low in sodium and cholesterol free makes the dish nutritious.

INGREDIENTS:
  • Tofu, firm, cubed - 50 g
  • Bean sprout - 30 g
  • Peanut, crushed - 1 tsp 
  • Jicama [sweet yam], peeled, chopped - 1 small
  • Cucumber, chopped - ½ katori
  • Green raw mango, chopped - ½ katori 
  • Pineapple [rind removed], chopped - ½ katori
  • Green apple, chopped - ½ katori

For sauce :
  • Kecap manis [sweet soya sauce] - 1 tbsp
  • Tamarind paste - 1 tbsp 
  • Sugar - 2 tsp
  • Chilli [chopped] - 1-2 no.
  • Lime peel - 1 tsp 
  • Balacan (shrimp paste) - 1 tbsp [optional]
DIRECTIONS:
Step 1 In a mixing bowl, place kecap manis (sweet soya sauce), tamarind paste, sugar, chilli, lime peel and balacan (shrimp paste) and mix all the ingredients well. Set aside for later use.  Step 2 Heat up a pot of oil, deep fry tofu until gulden brown and set aside for later use. Step 3 Cut Jicama, pineapple, green apple, cucumber and green mango into pieces and place it all in a big mixing bowl. Step 4 Add in a bean sprout and fried tofu. Pour in sauce mixture, toss and mix well till ingredients are well coated with sauce.  Step 5 Transfer into a serving dish and top it with crushed peanuts.
