Rajma Spinach And Cheese Triangles

Rajma is known for its flavor & richness of color. It is low in cholesterol, good amount of protein  & good for boosting energy. Veggies & whole wheat flour give a good amount of carbohydrates, minerals & vitamins required. Cheese added to the triangles gives them the protein & cheesy taste that all children like!

INGREDIENTS:
For the dough:
  • Whole wheat flour - ¾ katori
  • Salt - as per taste
  • Oil - ¼ tsp
For the rajma and spinach mixture:
  • Rajma (soaked overnight) - ¼ katori
  • Salt - as per taste
  • Oil - 1 tsp
  • Garlic - 2 tsp (chopped)
  • Onions - ¼ katori (chopped)
  • Tomato - ½ katori (chopped)
  • Capsicum - 2 tbsp (chopped)
  • Chilli powder - ½ tsp
  • Cumin powder - 1 tsp
  • Spinach (palak) - katori (chopped)
  • Feta cheese - 4 tbsp (crumbled)
  • Oil - 2 tsp
DIRECTIONS:
Step 1 Combine the wheat flour and salt in a bowl and knead into a soft dough using enough water. Keep aside covered with a wet muslin cloth for 10 minutes. Step 2 Knead again using oil and divide the dough into 4 equal portions and keep aside under a wet muslin cloth. Step 3 Combine the rajma, salt, and ¾ cup water and pressure cook for 4 to 5 whistles or till the rajma turns soft and is slightly overcooked. Step 4 Drain the rajma and grind in a mixer to a coarse paste. Keep aside Step 5 Heat the oil in a non-stick pan, add the garlic and onions and sauté till the onions turn translucent. Step 6 Add the tomatoes and sauté for another 3 to 4 minutes. Step 7 Add the rajma mixture, capsicum, chili powder, cumin seeds powder, and salt, and mix well. Step 8 Add the spinach and cook for another 5 minutes or till the mixture becomes dry. Step 9 Divide the mixture into 4 equal portions and keep aside. Step 10 Rull out each portion of the dough into a 150 mm. (6") diameter circle using a little flour. Step 11 Spread a portion of the prepared mixture in the center and sprinkle 1 tbsp of cheese over it and fuld to make a triangle as shown in the picture. Step 12 Heat a non-stick pan and cook each triangle using ½ tsp of oil till both sides are gulden brown. Step 13 Repeat with the remaining dough and mixture to make 3 more triangles. Serve hot.
