Taboulleh is a salad like no other, made with fresh vegetables, spices and with the "it" grain, bulgur. Adding generous amount of parsley and mixed veggies makes  it even better. The addition of quinoa provides extra punch of proteins and fibre. A drizzle of oil and lemon juice gives a special kind of flavor, which leaves a tingling taste on your taste buds. The salad is seasoned with the right amount of spice and herbs hence making the salad over all nutritious.

INGREDIENTS:

  • Uncooked quinoa - 30 g
  • Mixed veggies - ½ cup
  • Parsley, chopped - 2 tbsp
  • Lemon juice - 1 tbsp
  • Garlic flavoured olive oil - ½ tsp
  • Salt - use minimum, to taste
  • White pepper powder - to taste
  • Oil - ½ tsp

DIRECTIONS:
Step 1 Place the quinoa in a pressure cooker and pressure cook until done. Step 2 In a bowl mix together the mixed veggies, parsley, lemon juice, oil, salt and white pepper powder.  Step 3 Add the cooked quinoa and mix well.  Step 4 Serve culd.
