Peanuts are rich plant-based protein source and have a low glycemic index and they are also an excellent source of various vitamins and minerals like biotin. Peanuts contain good fat i.e. MUFA & PUFA that help to protect the arteries. It is also a good source of antioxidants like polyphenols and resveratrol which protect from many heart diseases and cancers.

INGREDIENTS:
  • Egg whites - 2
  • Peanut butter - 1 tsp
  • Ripe banana - ½ medium
  • Unsweetened almond milk - 1 cup [100 ml]
  • Rolled oats - 1 tbsp
  • Nestle Resource Diabetic Food for the Dietary Management / Whey protein - 1 scoop
  • Baking powder - a pinch
  • Oil / butter - ½ tsp [spray]
DIRECTIONS:
Step 1 Combine everything in the blender except for the oil. Blend until smooth. Step 2 Heat a skillet over medium-high heat and add the oil, allowing it to melt. Step 3 Pour approx. ¼ cup of the batter onto the hot griddle and cook for 2-3 minutes or until gulden on the bottom side. Step 4 Carefully flip and cook another side until gulden. Repeat with the remaining batter. Step 5 Serve and enjoy!
