A deliciously nutritious salad of mushrooms in balsamic vinegar dressing provides you with the vitamins and minerals required to help improve the gut activities, reduces estrogen to prevent cancer, and the antioxidants help to lower heart diseases. The addition of black and green olives give the needed omega fatty acids making it a heart-friendly salad. 

INGREDIENTS:

  • Button mushrooms [sliced][sauteed] - 5 nos.
  • Cucumber [chopped] - 1 tbsp
  • Onion [chopped] - 1 tbsp 
  • Green olives [whole ] - 5 nos.
  • Black olives [whole] - 5 nos.
  • Balsamic vinegar - 2 tsp
  • Salt - as per taste 
  • Black peppercorns [crushed] - as per taste
  • Garlic  [chopped] - 2 cloves
  • Lettuce [chopped] - 7 leaves
  • Fresh basil [crushed] - 6-8 nos.

DIRECTIONS:
Step 1 Halve the unpeeled cucumber, remove part of the seeds and then slice.  Step 2 Take onion and cucumber in a large bowl. Step 3 Add sauteed mushrooms, cherry tomatoes, green olives, and black olives and mix. For dressing: Step 4 Add balsamic vinegar, salt, crushed black peppercorns and garlic to a bowl and mix.  Step 5 Tear lettuce leaves and add to the bowl of vegetables.  Step 6 Add fresh basil leaves and mix. Step 7 Add the dressing, toss and serve immediately.
