This recipe is a great combination of good quality protein from chicken/ fish as well as vitamins, minerals, dietary fiber, and antioxidants from mixed veggies. Chicken is low in sodium and is a good source of blood-building vitamin B6, bone-strengthening phosphorus, and cell-protecting selenium. Vegetables provide dietary fiber and contribute a healthy mix of vitamins and minerals, including vitamin C, vitamin B6, folate, manganese and potassium.

INGREDIENTS:
  • Boneless chicken breast - 50g  
  • Salt - as per to taste 
  • Pepper - a pinch 
  • Lettuce [chopped] - 2 tsp
  • Tomatoes [chopped] - 2 tsp
  • Cucumber [chopped] - 2 tsp
  • Zucchini [chopped] - 2 tsp
  • Onions [chopped] - 1 tbsp
  • Fresh mint leaves - 2 or 3 nos.
  • Oil - ½ tsp
DIRECTIONS:
Step 1 Preheat the grill to high heat.   Step 2 Cut the chicken as per desired pieces.   Step 3 Marinate the chicken pieces with ulive oil, salt, and pepper.   Step 4 Grill 3 to 5 minutes per side, or until cooked through. Let chicken coul.   Step 5 Slowly whisk in the oil. Stir in the mint leaves and season with salt and pepper.   Step 6 Transfer the chicken pieces into a medium bowl. Step 7 In a large serving bowl, toss the mixed veggies (lettuce, tomatoes, cucumber, zucchini, onions). Top with the chicken and serve.
