Tomatoes are a rich source of lycopene, which helps in many ways, they help to detoxify the body. Regular use of mint is very beneficial as it is a good relaxant and relieves congestion.

INGREDIENTS:
  • Paneer - 40 g
  • Lemon juice - 1 tsp
  • Soy sauce - ½ tsp
  • Ginger [minced] - ½ tsp
  • Mint leaves [minced] - 4-5
  • Tomatoes[chopped] - 1 tbsp 
  • Onion [diced] - 1tbsp 
  • Jalapeno peppers [slit] - 1 no
DIRECTIONS:
Step 1 Cut tofu into two cubes. Preheat grill to medium-high. Step 2 Combine lime juice, soy sauce, and ginger in a medium bowl. Add tofu and toss to coat. Cover and marinate. Refrigerate for 15 to 30 minutes. Step 3 Tuck a mint leaf into a tomato quarter and thread onto skewers alternately with tofu, onion, and jalapeno. Step 4 Oil the grill rack. Grill the kebabs, turning occasionally, for 5 minutes. Grill until the vegetables are softened and the tofu is well glazed. Step 5 Instead of tofu, feel free to use low-fat paneer as mentioned in the ingredients.
