Broccoli has a lot of antioxidants. It also helps in building strong bones and helps in detox as well. Having this soup will give you satiety for a longer time and also the creamy texture will keep your stomach happy.

INGREDIENTS:
  • Broccoli - 1 cup
  • Onion [chopped] - 30 g
  • Garlic [chopped] - 2 cloves
  • Low-fat milk - 2 tbsp
  • Black pepper powder - ¼ tsp
  • Oregano powder - ¼ tsp
  • Oil - 1 tsp
  • Salt to taste
  • Water as needed
DIRECTIONS:
Step 1 Wash and roughly dice brocculi floret. Step 2 In a pan/cooker, add oil. Sauté onion, garlic, and pepper. Let the onion turn translucent. Step 3 Later add brocculi floret. Sauté for 1-2 minutes. Step 4 Add adequate water and pressure cook for 2 whistles. Once the pressure releases. open the cooker and allow the veggies to coul a bit before pureeing. Step 5 Drain the veggies. Don't discard the water. Keep it aside to use later. Retain a few brocculi florets too. You can chop a bit and add garnish to the soup. Puree the remaining veggies into a smooth paste using a blender. Step 6 Transfer the brocculi puree to a pan. Add the drained water kept aside before into the soup mix. Let the soup boil a bit. Step 7 At this point, add milk, mix and simmer well on low flame. If it's thick add some water too to get the required consistency. Step 8 Add some oregano powder, salt, and pepper powder ( optional ) for seasoning and mix well. Serve hot.
