Chicken or tofu are good sources of protein. Spices not only improve the taste of food but also a good source of vitamins B and C, iron, calcium, and other antioxidants.

INGREDIENTS:
  • Chicken breast or tofu, cut into cubes [boneless] : 60g
  • Low-sodium soy sauce: 1/2 tsp
  • Honey or maple syrup: 1/2 tsp
  • Grated ginger: 1 tsp
  • Garlic, minced: 1 clove
  • Ground turmeric: 1/4 tsp
  • Ground coriander: 1/2 tsp
  • Ground cumin: 1/2 tsp
  • Pinch of cayenne pepper (optional, for heat)
  • Vegetable oil: 1 tsp
  • Bamboo skewers, soaked in water for 30 minutes
DIRECTIONS:
Step 1 In a bowl, mix together soy sauce, honey or maple syrup, grated ginger, minced garlic, ground turmeric, ground coriander, ground cumin, and cayenne pepper (if using). Step 2 Add the chicken breast or tofu cubes to the marinade and toss until evenly coated. Let marinate for at least 30 minutes in the refrigerator. Step 3 Preheat a grill or grill pan over medium-high heat. If using a grill pan, lightly grease it with vegetable oil. Step 4 Thread the marinated chicken breast or tofu cubes onto bamboo skewers. Step 5 Grill the satay skewers for about 3-4 minutes on each side, or until the chicken is cooked through and has grill marks. If using tofu, grill until lightly browned and heated through. Step 6 Serve the satay hot with a side of peanut sauce and sliced cucumber and tomato, if desired.
