This colorful snack treat is packed with vitamins & minerals as varied as the colorful vegetables it contains. Bell peppers provide good amounts of vitamins A & C. The protein-packed hummus it contains supplements this mini meal with a good amount of protein to make this a filling snack.

INGREDIENTS:

  • Whole wheat bread slices -  2
  • Yellow bell pepper, finely chopped -  ¼ medium
  • Red bell pepper, finely chopped - ¼ medium
  • Onion, finely chopped - ¼ medium
  • Carrot, finely chopped - ¼ medium
  • Hummus -  ½ tbsp
  • Black pepper powder - ¼ tsp
  • Red chilli powder - ¼ tsp
  • Salt - to taste

DIRECTIONS:
Step 1 Mix together hummus, onions, yellow bell pepper, red bell pepper, carrots, black pepper powder, red chilli powder, salt in a bowl.  Step 2 Spread the mixture evenly on two slices of bread and cover them.  Step 3 Heat a non-stick pan. Place the bread.  Step 4 Cut into wedges and serve hot with tomato sauce or mint sauce.
