Protein boost of chickpeas makes it a perfect protein-rich meal for a vegetarian. Not only do chickpeas give an iron boost, but also is a low glycemic index food beneficial for diabetics.  Also, controls one's appetite, providing complete fullness.

INGREDIENTS:

  • Chickpea [boiled]- 15 g
  • Onion [chopped] - 1 tbsp 
  • Cucumber [chopped] - 2 tbsp 
  • Carrot [grated] - 1 tbsp 
  • Cabbage [grated] - 2 tbsp
  • Capsicum [chopped] - 1 tbsp
  • Cumin seed powder - ½ tsp
  • Mint leaves  [chopped] - 1 tsp 
  • Coriander leaves  [chopped] - 1 tsp
  • Lemon juice - 1 tsp 
  • Salt - as per taste 
  • Red chilli powder - a pinch 
  • Pepper - a pinch 

DIRECTIONS:
Step 1 Soak chickpeas for 7-8 hrs. Drain out the water and boil with water and a pinch of salt till it tenders.  Step 2 Mix chickpeas, onion, chopped cucumber, grated carrot, cabbage, chopped capsicum, coriander leaves, cumin seed powder, mint leaves, salt, pepper, lemon juice and red chilli powder and enjoy the delicious protein-filled chaat.
