Make your sandwich a healthy evening snack option with this recipe. Chicken is high in protein, low in sodium. Also, adding the vegetables on multi grain bread, gives an energy boost with an increase in its fiber content while the chicken/ egg whites add on to the protein content. Adding multi-grain to the diet would be a better option as compared to simply white bread.

INGREDIENTS:
  • Multigrain bread [ toasted ] - 1 slice 
  • Chicken [ boiled, shredded ] - 15 g
  • Onion - 10 g
  • Ginger - ½  inch
  • Garlic - 2 cloves
  • Capsicum - 10 g
  • Green chillies - 2 nos. 
  • Turmeric powder - a pinch
  • Coriander - ¼ tsp.
  • Mint leaves - a few 
  • Lemon juice - ½ tsp
  • Oil - ½ tsp
  • Salt as per the taste
DIRECTIONS:
Step 1 Heat the oil in a broad non-stick pan, add the onions, ginger and garlic and saute on a medium flame for 1 minute. Step 2 Add the capsicum, green chillies, turmeric powder and salt and saute for a minute. Step 3 Add chicken and saute on a medium flame for 1 to 2 minutes Add the coriander, mint leaves, lemon juice and salt, mix well and cook on a medium flame for 1 minute. Step 4 Divide the topping into equal portions and keep aside. Step 5 Place the toasted bread slice on a clean dry surface and spread a portion of the topping evenly on the bread slice. Step 6 Cut into 4 pieces and serve immediately.
