Cheese and chicken is a delicious way to get some extra protein in. Consuming cottage cheese after a workout not only provides protein, it can contribute to bone health too as cottage cheese is a good source of calcium. Chicken is an excellent source of lean protein and other important nutrients like niacin, B vitamin essential to carbohydrate metabolism.

INGREDIENTS:
  • Boneless, skinless chicken - 1 cup
  • Brown rice raw - 30 g
  • Freshly chopped parsley - ¼ cup
  • Red pepper, crushed - ¼ tsp
  • Cottage cheese, crumbled - 15g
  • Olive oil - 1/2 tsp
  • Salt and black pepper - as per taste 
  • Water - 2cups
DIRECTIONS:
Step 1 Wash and soak the brown rice in enough water in a deep bowl for 10-15 minutes. Drain well. Cook the rice. Keep aside. Step 2 In a small bowl, combine the parsley, and crushed red pepper fuld in the cheese.  Step 3 Season the chicken with salt and pepper.  Step 4 In a pan, heat the oil over medium heat; cook the chicken until cooked through, 2 to 3 minutes per side.  Step 5 Mix it with rice and cheese mixture and serve.
