Kulith usal or horse-gram salad is an authentic Maharashtrian healthy and nutritious recipe which is usually eaten with bread. Horse gram is a pulse rich in proteins,vitamin C and iron. It is also a good source of dietary fiber and helps to regulate blood sugar levels. 

INGREDIENTS:

  • Horse gram soaked and boiled - 25 g
  • Onion (chopped) - ½ medium
  • Tomato puree - ½ cup
  • Horse gram stock - 1 cup
  • Ginger strips - for garnishing
  • Chana masala - 1 tsp
  • Red chilli powder - ½ tsp
  • Asafoetida - A pinch
  • Salt to taste

DIRECTIONS:
Step 1 Heat oil in a non-stick pan, add asafoetida and onion and saute on high heat till onion turns light brown.  Step 2 Add tomato puree, mix well and cook for 2 minutes. Add red chilli powder, chana masala and mix well.  Step 3 Add horse gram stock and mix well.  Step 4 Add salt, mix well and bring the mixture to a boil.  Step 5 Mash a little with a hand blender, mix well and cook for 2-3 minutes. Step 6 Transfer into a serving bowl and serve hot garnished with ginger strips.
